Our February has started off with some ordinary days of baking, crafting, and snow/sleet. I am knitting some things for baby before he arrives and enjoying my newly found tea cup. It was hiding in the back of my cabinet. I received a milk frothing device for Christmas and it is my new obsession. I can't get enough of frothy milk on top of my tea. I just like having a little something special to enjoy during the day. The girls tend to turn into little squirrels in the late afternoon after home school time and naps so I have turned to classical music and watercolors to calm the space and keep the peace. Our youngest still likes to tattoo herself with the paints but it comes with the territory and I enjoy watching them both work diligently over their paper. I have to say that I have zero artistic talent when it comes to painting but I do love watercolors and the way they can calm even the busiest little hands.
We made Banana Bread this week, I am sure that I have shared this recipe before but it is worth repeating.
Banana Bread
1/2 cup of butter, melted
1 cup white sugar
2 eggs ( room temperature)
1t. vanilla extract
1 1/2 cup all-purpose unbleached or whole wheat flour
1t. baking soda
1/2 t. cinnamon
1/2 t. kosher salt
1/2 cup sour cream
1/2 cup chopped walnuts or pecans
2 medium, very ripe bananas- mashed
chocolate chips ( optional)
Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan
In a medium bowl. combine flour, baking soda, salt, and cinnamon.
In large bowl, mix together butter and sugar until well combined
add eggs and vanilla to butter/sugar mixture
Slowly add, dry ingredients and combine well after each addition
Fold in sour cream, nuts, bananas and chocolate chips
spread into pan and bake for 50-60 minutes.
